Makki Ki Roti

Makki ki roti is a Desi(Indian) bread which goes best with saron ka saag.

Indrediants:
Maize flour – 250 grams
Salt – As per taste
Salted Butter or Pure ghee – To Fry
Warm Water

How to prepare:
1. In a flat plate knead the maize flour along with warm water and salt properly till it becomes a soft dough.
2. Divide the dough into equal parts and then make rolls of each part.
3. On a kitchen platform,keep the roll between square polythene and start rolling with belan or start giving pressure with hand so as to give a shape of chapati(roti).
4. Heat the tawa and once it’s slightly cooked turn it upside down and apply some butter of ghee and turn it upside down again.
5. once it’s cooked properly from both the sides,serve it along with sarson ka saag and pickle.

Sarson Ka Saag

Sarson ka saag is undoubtedly the pride of the Punjabi recipes in winters when served with lot of homemade white butter along with makke ki roti.On the top of it, it’s very good for our health as well.So what are we waiting for for, let’s go and grab some mustard(sarson) and spinach(palak) leaves and start making this desi delicious dish from Punjab.

Indrediants:
Refined Oil – 1 tbsp
Salted Butter or Pure ghee – 25 grams
Mustard(Sarson) Leaves – 500 grams
Spinach(Palak) Leaves – 250 grams
Finely Chopped Green Chillies – 2
Finely Chopped Garlic – 1/2 tbsp
Finely Chopped Ginger – 1/2 tbsp
Finely Chopped Onion – 1
Salt – As per taste
Lemon juice – 1/2 tbsp

How to prepare:
1. Chop mustard(sarson) and spinach(palak) and wash properly.
2. In a pressure cooker heat oil and then add mustard,spinach and green chillies and stir for some time(aprrox. 1-2 mins).
3. Then, add a cup of water along with ginger and garlic with salt as per taste and stir well.
4. Close the pressure cooker and let it get cooked for about 1 whistles.
5. Allow it to get cool and remove the excess water.
6. Grind the cooked mixture of leaves,green chiilies,ginger and garlic into rough paste.
7. In a pan melt butter or ghee and add onion and let it turn into golden brown, then add paste and stir well till the time it starts leaving oil.
8. Add lemon juice to it and stir once again. cook for about 2 more minutes.
9. Garnish it with grated butter or cheese and serve with makki ki roti and definitely get compliments from your loved once.

Gajar ka Halwa or Gajrela

Gajar ka Halwa is a delicious north indian dessert that has a sweet flavour of carrots(Gajar) cooked in milk.Even being a recipe from north india still it’s very popular across the country.Gajar ka halwa is commonly available in most of the sweet shops and restraunts in winters.It can even be made at home very easily and tastes more delicious as compared to any restaurant.Now, get ready to make this recipe for you and your loved once and enjoy…

Ingredients:
Full Cream milk – 1 liter
Gajar or Carrot(Grated) – 1 kilogram
Desi Ghee – 4 tbsps
Sugar – 250 grams
Cardamom Powder – 1/2 tbsp
Sliced Almond – 50 grams
Sliced Cashew – 50 grams

How to prepare:
1. In a heavy base kadai or pan melt the desi ghee and on medium heat for about 6-7 minutes. stir fry the shredded gajar(Carrot) so that the water is evaporated and the color is slightly changed.
2. simultaneously, in another bowl for about 10mins. boil the milk till the time it’s reduced to half.
3. In little ghee or butter roast the dry fruits and keep them aside.
4. Now, add milk to the the carrot and cook till the time it’s completely absorbed.
5. After that add sugar,cardamom powder and half of the roasted dry fruits to it and stir well,cook for about 4-5 more minutes till the time it starts leaving ghee.
6. Serve after garnishing with the remaining roasted dry fruits.

Winter is about to end!

As February has already started, winter is about to finish.Most of us love to have warm,spicy,crispy,hot and sweet food at this time which keeps us in the comfort zone.These winter nights becomes great when we are served with versatile desi recipes starting from punjabi to south indian and from maharashtrian to assamies dishes…
So Today we will start with our 1st desi recipe which is on demand from you i.e. Gajar ka Halwa or Gajrela commonly known in Punjab.
